serves aged sushi.
Aging is the process
of letting fish rest for several days
after careful preparation. This is a technique
that is used to draw out the delicious flavors
of the ingredients.
Enjoy Eitaro's unique sushi,
which is made with fish meticulously selected
by the proprietor and prepared with proven technique.
The courses, which are prepared in front of diners by an artisan,
allows you to immerse yourself in the dining experience.

If you would like to enjoy Edomae sushi, the origin of nigirizushi, we recommend you try a course meal. The counter seating is reserved for course meals, allowing diners to enjoy the sight of the artisans as they perform their work. Course meals are also available at lunchtime, but advance reservations are required.
